I Love German Wine and Food - A Mosel Riesling
If you are looking for fine German wine and food, consider the Mosel region of central western Germany on the border of Luxembourg. You may find a bargain, and I hope that you'll have fun on this fact-filled wine education tour in which we review a local white Riesling tasted with several meals and paired with imported cheeses.
The Mosel Valley has long been considered one of the most beautiful river valleys in the world. This region, previously known as Mosel-Saar-Ruwer for its three rivers, is proud of its Riesling wine. Some of the greatest Rieslings in Germany and in fact in the entire world come from the Mosel Valley. Experts can often identify Mosel Rieslings because of the slate in the local soil, which may impart a taste of flint. Mosel vineyard slopes are among the steepest in the wine-producing world, sometimes attaining 70 degrees. The soil is so precious that every spring local workers lug pails of soil up these slopes, reversing temporarily the effect of the rains that wash the soil down every winter.
Mosel is fifth among the thirteen German wine regions with respect to both vineyard acreage and total wine production. Slightly more than three quarters of the wine produced here is QbA and somewhat less than one quarter is higher quality QmP wine. Only one percent is table wine. Over half of of all Mosel wine is Riesling. The German hybrid Müller-Thurgau represents about 20% of the wine production. In third place is the historic variety Elbing that dates back to Roman times and is the major grape variety in the neighboring country of Luxembourg. Only about 2% of Mosel wine is red.
Basically the Mosel Valley runs from Koblenz not far from Germany's former capital Bonn to the city of Trier that sits very close to the border. These two cities are linked by the Mosel Weinstrasse (Mosel Wine Road) which is about 140 miles (224 kilometers) long on the eastern side of the river and somewhat less on the western side. Of course, you could take the autobahn to get between Koblenz and Trier at breakneck speed. If you do, you'll miss the interesting little towns and vineyards along the way.
Bernkastel-Kues is a town of about eight thousand that sits astride the Mosel River with Bernkastel on the east bank and Kues on the west bank. Bernkastel is about seven hundred years old but the area itself was first inhabited thousands of years ago. Bernkastel's medieval town square is lovely with numerous half-timbered houses, some of which were built in the Fifteenth Century. St. Michaelsbrunnen (St. Michael's Fountain) is right on the square and other historic fountains are nearby. Make sure to see the ruins of Burgruine Landshut (Castle of Landshut) for an excellent view of the city and surrounding vineyards. The first weekend of September marks the annual Weinfest der Mittelmosel (Wine Festival of the Middle Moselle River Valley) that includes a festive procession and a great fireworks display.
Bernkastel is home to the Bernkasteler Doctor vineyard producing one of Germany's most expensive wines. According to popular legend a Fourteenth Century Archbishop of Trier was too sick to be helped by traditional medicine. He tasted some of the local wine, recovered, and said, "The best doctor grows in this vineyard in Bernkastel." Due to questionable changes in German wine laws wine bottles labeled Bernkasteler Doctor may now be made by thirteen producers instead of three as previously. Let the buyer beware.
Kues was home to the Fifteenth Century theologian and philosopher Nikolaus Casanus who founded the St.-Nikolaus-Hospital that operates a wine estate and the Mosel-Weinmuseum (Mosel Wine Museum). The museum's library is open for tours and its wine cellar is open for tastings. Several local winemakers hold Tage der offenen Weinkeller (Open wine cellar days) in which they present and sell their wine in their own wine cellars.
Before reviewing the Mosel wine and imported cheeses that we were lucky enough to purchase at a local wine store and a local Italian food store, here are a few suggestions of what to eat with indigenous wines when touring this beautiful region.

St. Urbans-Hof Riesling Kabinett 2005 8.6% alcohol about $20.00
Let's start by quoting the marketing materials. The 2005 Piesporter Goldtröpfchen Riesling Kabinett - still manages to show true Kabinett delicacy on the palate, which Weis attributes in part to earlier harvest and frankly in part to this site's compatibility with higher yields. Skin contact and minimal clarification in the cellar help compensate for any danger of dilution. (Lower-yielding parcels nowadays must result in Spätlese or Auslese.) Pineapple, grapefruit, black currant, and Golden Delicious apple dominate the proceedings, suffused with an aura of smoky, crushed stone, and mouthwatering acidity. This is once again a 'little' Mosel archetype and a terrific value ... And now for the review.
Before the meal I thought to taste this wine on its own. It was delicately acidic and palate cleansing with light bubbles. Then I started with sweet and sour purchased barbecued chicken wings. The wine was fine with light acidity. Now I was ready to begin, so to speak. My first pairing was with a commercial barbecued chicken leg with the paprika-coated skin, potatoes roasted in chicken fat, and some disappointing pickle slices. The wine's fruit intensified to meet the chicken's fat. This Riesling was quite round when dealing with the melt-in-your-mouth potatoes.
The next meal was an omelet with a local Provolone cheese and Turkish salad. The wine was round, thick, and pleasantly sweet. The word feathery came to mind. It sort of floated especially after the Turkish salad. Then I savored a high-quality, chocolate-coated vanilla ice cream bar. The wine retained its acidity; it was almost a good match.
The final meal was more of a snack. I ate some packaged Texas corn fritters with generous dollops of 14% sour cream. The wine was bold, sweet, and pleasantly acidic but frankly wasted on such plebian fare. I did finish the bottle with home made barbecued chicken to which the wine did honor. Even though the barbecue sauce wasn't sweet the combination was excellent.
The initial cheese pairing was with a Dutch Edam that was nutty, a bit fatty, and somewhat sour. The Riesling's sweetness seemed to step up a notch and it displayed tingling acidity. It's been a long time since I enjoyed a wine and cheese pairing this much. Then I went to a mild-tasting Italian Friulano. The wine was acidic with sugar in the background.
Final verdict. This Riesling is a winner. I wouldn't hesitate to pair it with a top of the line German poultry dish, the kind that you pay big bucks for over there. At 8.9% this is one of the least alcoholic wines that I have tasted in a long, long time. And you know what, I didn't miss it a bit.

Setting Up Email Accounts
Setting up email accounts from the iPad is fairly easy. You just need to know all your email account information. You will need the email address, password, account type (POP,IMAP), incoming mail server (pop.example.com), outgoing mail server (smtp.examle.com) and the port number.
This information can be provided by your email service provider. If you don't already know the incoming and outgoing mail server information, it's usually faster to search on Google for the information than contacting your email service provider.
To add a email account tap Settings, tap "Mail, Contacts, Calendars," tap Add Account. then select the type of account you would like to add and enter all your email information.
Managing Emails Accounts
You can add multiple email accounts and once the email accounts are on the iPad it's easy to manage the accounts.
Stop using an Account:
Choose "Mail, Contacts, Calendars" choose an account, then turn Account off.
If an account is off, iPad doesn't display the account and doesn't send or check email from or sync other information with that account, until you turn it back on.
Delete an account from iPad
Choose "Mail, Contacts, Calendars" choose an account, then scroll down and tap Delete Account.

How Do I Play Windows Games on a Mac?

Review - MSI Wind Netbook U120-024US
Pros: Big Hard Drive, Webcam,10" Bright Screen, Low Price
Cons: Wireless g, but no wireless N.
Summary: If you need a little more than just connecting to the internet at the coffee shop, the MSI Wind Netbook U120-024US should do the trick. With plenty of hard drive space and slightly larger screen than your typical netbook, the MSI Wind Netbook will actually let you get some work done.
I've never been a big fan of these netbooks. The early ones actually had less memory and processing power than my blackberry. However, we are now seeing some come out with the new Intel Atom Processor, 10" screens, and most importantly, a real 160gb hard drive! With Windows XP installed, you can now run all your office applications and software that you would on your desktop. Now you can actually get some work done. In fact, for normal office/student use, this can be your sole computer. Just add a USB keyboard/mouse and attach a 20" monitor, and you have yourself a virtual desktop.
The Wireless G is sufficient for 99.9% of wireless users right now, but wireless N is the latest and greatest. Although technically faster than wireless g, it's real advantage is range. However, don't let the fact that this runs on wireless g keep you from buying it. I don't know of any hotspots that are using wireless N right now, and for home/office use, range is probably not a problem.
As for the processor and memory. The MSI Wind Netbook U120-024US uses Intel Atom which is designed primarily to extend battery life by using less power. From various benchmarks, it excels in office applications and multimedia decoding (watching DVD's for example). For gaming and other high graphic intensive applications, it lags significantly behind processors found in larger 6 pound laptops.
The MSI Wind Netbook U120-024US comes with 1gb of ram and can be expanded to 2gb. For normal use on a Windows XP operating system, this should be fine. Generally, you'll only notice your system slowing down when you have several applications open at the same time. If you constantly open several applications at the same time, a 2gb upgrade is cheap and you'll be glad you did it. Otherwise, just open one thing at a time, and close it each time you're done before opening the next app.
I really can't comment on the webcam too much. It works, the picture is decent in bright light, and it will work with all the major messenger services. Nothing to brag about here, but it's there if you need it.
In summary, the MSI Wind Netbook U120-024US does more a blackberry, let's you do excel spreadsheets and word documents, checks your email, and comes with a real hard disk for saving your work. Also, the 10" big enough for you to actually see things. The amazing thing about his netbook is the price. It costs the about the same as other netbooks that don't have a real hard drive.

Sausage and Peppers
What you need:
• 1.5-2 lbs Italian sausage links
• 2 large onions, sliced
• 1 large red or yellow bell pepper, cut in strips
• 1 large green bell pepper, cut in strips
• 3/4 t salt
• 1/2 t oregano leaves
• 2 T olive oil
What you do:
• Pour about 1/3 c water into a large skillet. Add sausage to skillet and cook over med heat until water simmers. Cover skillet and simmer for 5-7 minutes. Remove cover and continue cooking, turning often, for about 20 minutes or until sausage is nicely browned. Set aside sausage and add olive oil to skillet. Heat oil and add all remaining ingredients to pan. Cook over med heat until vegetables are browned and tender, stirring often. Add sausage to skillet, cover and cook on low until heated through.
• Sausage and peppers are great by themselves or with a side of rice. They are also delicious on a brat bun or crusty roll with your favorite condiments.
Low Fat Sausage and Peppers
What you need:
• 14 -16 oz package smoked turkey sausage
• 1 medium onion, sliced
• 1 large green pepper, cut in strips
• 1 large red pepper, cut in strips
• 14.5 oz can crushed tomatoes
• 4 oz can sliced mushrooms, drained
• 2 T olive oil
• 1 t oregano
• 1 t basil
• 1/2 t red pepper flakes
• 1/4 t garlic salt
• 1/8 t black pepper
What you do:
• Heat 1 T olive oil in a large skillet over med-high heat. Add onion, peppers, mushrooms, oregano, basil, red pepper flakes, salt and pepper to skillet and cook until vegetables are softened but still crisp, stirring frequently. Remove vegetables from pan. Heat 1 T oil in skillet. Cut sausage in half lengthwise, then slice in 1/2 inch pieces. Add sausage to skillet and cook at med-high heat until lightly browned. Add vegetables and crushed tomatoes to skillet and mix. Cook over medium-heat, stirring occasionally, until heated through; serve.
• If you're not worried about the fat content, you may use polish sausage or smoked sausage.

Story of Tiramisu and Real Italian Recipe
There are several versions which tell the history of Tiramisu and this makes it hard to trace the real roots of this delicious dessert.
I think we should eat it and enjoy it but being Italy a country with a very rich culinary regional tradition, the question on the creator of Tiramisu has started a real dispute, mainly amongst the region of Tuscany, Piedmont and Veneto.
The official version however makes Tuscany the birthplace of the world loved Tiramisu.
The official story tells that Tiramisu was invented in the 17th century in Siena to celebrate the visit of Grand-duke of Tuscany, Cosimo de Medici (the Medici family is one of the most important family in the history of Tuscany). The chefs wanted the dessert to reflect the Grand-duke personality. So it needed to be important, with an outstanding taste; rich and creamy as the Grand-Duke loved desserts and sweet food in general. It also needed to be made with local ingredients! This is how the Tiramisu recipe was worked out. The result, we all know is absolutely outstanding.
The original name of the dessert was "Zuppa del Duca" which means "Duke's Trifle". The Grand-Duke loved the dessert so much that he took the recipe with him to Florence. This had a tremendous success amongst the Italian aristocracy. The word that went round the aristocracy's milieu bestowed aphrodisiac power to the trifle and this is how the name Tiramisu was coined. Tiramisu literally means "lift me up".
After a bit of historical background, here is the recipe:
Ingredients
6 eggs medium size
14 oz (400 g) Ladyfinger biscuits
½ cup brewed espresso or very strong coffee, at room temperature
5 oz (120 g) white sugar plus 2 spoonful to sweeten the coffee
17 oz (500 g) mascarpone cheese
2 oz (50g) Bitter sweet chocolate flakes (optional)
1 oz (30 g) bittersweet chocolate or cocoa powder for dusting (optional)
Divide the egg yolks from the egg whites. Then whisk the egg yolks and half sugar with an electric mixer until very thick. Then add the mascarpone. Whisk until smooth. Then whisk the egg whites and the remaining sugar. When is smooth, add the two mixtures together. Spread a layer of cream on a dip dish.
Pour the sweetened coffee in a shallow bowl. Dip the two sides of each ladyfinger in the coffee and then place it in the dip dish on top of the cream.
Repeat this for each ladyfinger until the layer is completed then you pour the cream on top. Then repeat the layers until all the coffee is used up.
Refrigerate overnight.
Before serving, sprinkle the top with cocoa powder and/or chocolate flakes if desired.

Introducing a Coaching Culture
A coaching culture is where an organisation uses coaching techniques as the main management style, there is an emphasis on collaborative working and the organisation is committed to developing its people.
Most professional organisations use mentoring as part of an induction process for new recruits and as part of the career development process for individuals. Mentoring is very good for passing on specific knowledge quickly but is not so good at developing the potential of individuals, teams and organisations.
To develop potential a coaching approach has been demonstrated as being far more effective with a better return on investment than conventional training or mentoring. Coaching can be slower initially but then rapidly accelerates and produces greater and longer lasting improvement in performance and motivation.
Every organisation is different, has its own culture, is at a particular stage of development, has its own values, has its own way of doing things and has its own goals. Because of this introducing a coaching culture has to be tailored to each organisation. There are some steps I would recommend to most organisations:-
- Find out where you are at present. You may think your organisation operates efficiently and professionally but cannot explain your staff turnover and absentee rate. You may have tried other techniques only to run into unexpected opposition and have ended up wasting both time and money. This fact find is best carried out by an external advisor who will provide an unbiased report.
- Start at the top. For coaching to work effectively its introduction must start at the very top. I have seen some organisations try to introduce it at the bottom only to find it causes more problems as people's expectations are raised only to find the more senior managers are not ready for the cultural shift.
- Understand why you should introduce a coaching culture into your organisation. This may be to improve staff retention, improve team performance, achieve alignment with corporate goals, improve innovation or a large variety of other reasons. Again by knowing your starting point and your goal it will be possible to measure the return you make on your investment.
- Coaching needs to become your chosen method of operating and management, it should not be a peripheral or parallel system which is used occasionally. It needs to permeate all your systems, interactions and decisions
- All systems require support and the same is true for coaching. People should be actively encouraged to coach other people and to receive coaching. There is always room for improvement and there is always a contribution that coaching can make. Even people who have received coaching on several occasions will benefit from additional coaching, perhaps from a different coach.
- Progress towards a coaching culture needs to be managed in the same way as any other project. Goals need to be set, budgets allocated, the project is initiated and progress in monitored. Any deviations from plan are investigated and either adopted or corrected as required.
You will start to notice the change very quickly as confrontations and arguments reduce to be replaced by a collaborative and supportive approach. People, who perhaps made little contribution previously, start to make suggestions and eventually to lead projects.

High attrition rates and a serious dearth of talent is a constant source of concern for most employers. Companies spend sizeable sums on their retention strategies, which may focus on a combination of ways to inculcate loyalty among employees - compensation, training and career growth being a few.
As the owner of a start up firm, it is natural to encounter some difficulties in the beginning. We don't expect most of you to know how to structure an employee's pay, let alone offer the latest in compensation packages. If you want to start from the basics, you are right on track!
Salary: The pay package must be in keeping with the profile of the job. If you require specialized skills, chances are that you will have to pay more. 1. Lack of constancy of purpose:

What Matters Most - Communication with Employees Is Key to a Successful
A merger and acquisition is complete when the integration of the two companies is complete, not when the deal is announced to the marketplace or consummated according to a legal or financial transaction. Mergers and acquisitions (M&As) are a significant activity for many organizations. Yet most mergers are not successful, primarily because the "merger of two organizations is actually a merger of individuals and groups," according to Buono and Bowditch, authors of The Human Side of Mergers and Acquisitions: Managing Collisions Between People, Cultures, and Organizations.
A merger means that two previously separate organizations are combined into a third, new entity. An acquisition involves the purchase of one organization for incorporation into the new parent firm.
Too many companies enter into M&A activity without recognizing the impact on the organization and the overall affect on the human element within the two merging companies. M&A activities that do not meet corporate objectives can result in lost revenue, customer dissatisfaction, and employee attrition issues.
M&A researchers, consultants, and internal practitioners agree that using transition teams, an integration manager, and a comprehensive employee communications strategy rank among the best practices. Supporting best practices include; implementing strong communication skills, having an unwavering commitment to the integration, being open with employees, and making visible movements towards integration milestones and 100-day goals to help increase the success of merger and acquisition activity.
M&A integration examines all the tasks and plans required to successfully bring the two companies together. When an intended M&A transaction is announced, employees of both companies expect change. The early days following the deal's close are a critical time for the company to initiate integration of the organization, processes, people, and systems.
Focusing on M&A's Human Dimension
One of the most important resources a target organization has is its talent pool, yet the human dimension receives woefully inadequate attention during M&As. Fail to pay attention to the human dimensions and human dynamics of M&A activity, and you'll lose key talent. Organizations typically focus on a target's intellectual property and capital, while failing to recognize the capabilities and strengths of their employees, even though the latter enhance their competitive edge. As researchers Pfeffer and Tromley put it, "See the workforce as a source of strategic advantage, not just as a cost to be minimized or avoided."
Layoffs and turnover can and do happen at all levels of an organization. Approximately 25% of executives in acquired companies leave within the first year - a rate three times higher than companies not acquired. That's according to M&A researcher Jeffrey Krug, who reviewed business literature going back two decades to calculate that statistic. Another study shows that nearly one-half of senior managers in an acquired firm leave within one year, and 72% are gone within the first three years if retention efforts have not been made. (Tetenbaum, 1999).
To minimize departure rates, consider using alternative practices. When Wells Fargo made a particular acquisition, the firm undertook no reductions after an analysis of annual attrition rates suggested that recruitment would be required within six months of completing the acquisition.
How can you help prepare an organization for change? Two options include polling and surveying the employee population, and developing information and communication strategies aimed at introducing opportunities for employees to participate in the change process.
M&A practitioners who respond to questions and concerns about structural, cultural, and role-related issues, and revise expectations, will achieve a degree of organizational stability.
The goal of integration is to achieve key actions as quickly as possible-with "prudent" not reckless speed. One high-tech company took sixty executives off-line for five months within two weeks of the deal announcement, in order to integrate and develop the vision for the combined company. Eventually, 2,000 employees were involved, demonstrating a successful balance between the need for confidentiality and the need for communication.
The M&A experts also favor appointing an integration manager with primary responsibility and accountability for managing the integration process and acting as a bridge-builder between companies. Look for visible, internal candidates who are respected, available for this full-time role, and report to the business leader.
M&A experts recommend assembling teams of employees from both parties to participate in integration planning. Transition teams (internal practitioners prefer the term "integration teams") that involve employees from both the target and the acquiring company ensure a successful deal completion. Consider the transition team a lever to share cultural intelligence between the two companies. My research indicates that the integration team should stay in place until 80% of the value capture intended for the acquisition is in place. Value capture opportunities include reduced expenses from operating efficiencies achieved as a result of the M&A.
Both internal and external M&A experts recommend that the new leadership team be named on Day One. If possible, appoint and announce other layers of the management structure at the same time. One expert commented that not announcing the leader on Day One is a "de-accelerator," but here's a caveat to that approach: Don't announce a new management structure in situations where the management team is going to be replaced.
Develop a Strategic Employee Communication Strategy
Both external and internal experts agree on the importance of developing and executing effective employee communications, particularly conveying how the transaction will impact organizational members. Also, get supervisors to talk to people one-on-one about their future after the change in ownership. Supervisors need to be aware of, and address, morale and personal issues individuals will face. Everyone in both organizations needs to understand the reasons for the combination.
Make communications open, honest, frequent, early, repeated, and strategic. Identify constituents, messages, mode, and frequency. Take all communication opportunities to drive the implementation of the strategy. Management and others should avoid using "killer phrases" such as "a merger of equals" (this does not exist) or "We will only tell employees something when there is something to tell." Information can always be shared-even if it is simply the progress of the deal or integration. (Buono & Bowditch, 1989).
Communication is vital throughout the M&A process. The employee communication strategy is a clear opportunity to provide employees with information to reduce uncertainty. Internal practitioners in particular emphasize the need for meetings with all employees, and the need for a communication plan for customers, partners, investors, and the analyst community as well.
Communication recognizes that the respect for confidentiality of the process and communication updates can be balanced in M&A activity, might lead to less uncertainty and insecurity for employees.
According to Buono and Bowditch, "organizational members are more likely to react positively when they are well informed-exposed to unfavorable as well as favorable possibilities-than when they are forced to rely on hearsay and speculation." One high tech company communicates directly with employees immediately following deal closure. The company recognizes that personal issues such as job security are uppermost in employees' minds in the initial days following an M&A announcement. This practice ensures that employee concerns about job security and their role in the organization are dealt with first.
As Buono and Bowditch state, "Attention to the details involved in a merger or acquisition requires a concern for both obvious and less apparent matters. Indeed, many of the 'little things' in an organizational combination signal the intention and concern of the acquiring firm."
Communication figures heavily throughout the entire M&A process as a best practice. It provides employees with valuable information and addresses the uncertainty that exists during this period of transition.

First, it's important to understand the recruiter mindset.

A successful recruiter spends time with the most marketable resources first. The key is to make you the most marketable resource.
